剁椒鱼头

鲜活鱼头清蒸至嫩,铺上剁椒和蒜蓉,出锅淋热油,香辣鲜美,鱼肉鲜嫩入味

操作步骤#

  1. 腌鱼

    将鱼头处理干净,放入盘中。

    加入 料酒1勺生抽1勺蚝油1勺,在鱼头正反面撒上 盐1匙,涂抹均匀。

    腌制 约 10 分钟 让鱼头入味。

  2. 制作剁椒料

    小香葱 取葱段,生姜切2片蒜8瓣拍碎,一起剁成碎沫,放入碗中。

    加入等量 剁椒,再加入 蒸鱼豆豉1勺蚝油1勺生抽1勺料酒1勺白醋1勺白糖0.5匙胡椒粉0.5匙盐0.5匙,搅拌均匀

    喜欢更辣的可以加入适量 小米辣

    剁椒量可根据个人口味适量增加,一般以上比例已足够。

  3. 蒸鱼

    鱼头 腌制好后轻轻洗净,盘底铺上 姜片,再放上 鱼头

    将调好的 剁椒料 均匀铺在 鱼头 上。

    水烧开后放入蒸锅,大火蒸 10–15 分钟(根据鱼头大小调整,拿中间值即可,出锅前可尝试确认熟度)。

    蒸好后,将 小香葱葱叶 切碎备用。

    取决于鱼头的大小,如果不确定取中间值即可,实在没把握可以出锅前尝一下

  4. 出锅

    葱花 撒到 鱼头

    起锅烧油,通常建议多烧一些,烧热到油开始冒烟,均匀的浇在鱼头上,完成!

    盘中的汤/油不需要倒,鱼头吃到一半清水煮一些面加在里面也很香

    喜欢吃辣一些的,可以把油替换成辣椒油

    也可以在热油的时候,加入一点点花椒(几粒)八角(半个)带出香味后捞出,这样油会带一些香气,但需要注意不要炸糊了,差不多点捞出即可
