剁椒鱼头

操作步骤#

腌鱼
将鱼头处理干净,放入盘中。
加入
料酒1勺、生抽1勺、蚝油1勺,在鱼头正反面撒上盐1匙,涂抹均匀。腌制 约 10 分钟 让鱼头入味。

制作剁椒料
小香葱取葱段,生姜切2片、蒜8瓣拍碎,一起剁成碎沫,放入碗中。加入等量
剁椒,再加入蒸鱼豆豉1勺、蚝油1勺、生抽1勺、料酒1勺、白醋1勺、白糖0.5匙、胡椒粉0.5匙、盐0.5匙,搅拌均匀喜欢更辣的可以加入适量
小米辣。剁椒量可根据个人口味适量增加,一般以上比例已足够。

蒸鱼
鱼头腌制好后轻轻洗净,盘底铺上姜片,再放上鱼头。将调好的
剁椒料均匀铺在鱼头上。水烧开后放入蒸锅,大火蒸 10–15 分钟(根据鱼头大小调整,拿中间值即可,出锅前可尝试确认熟度)。
蒸好后,将
小香葱葱叶切碎备用。取决于鱼头的大小,如果不确定取中间值即可,实在没把握可以出锅前尝一下

出锅
葱花撒到鱼头上起锅烧油,通常建议多烧一些,烧热到油开始冒烟,均匀的浇在鱼头上,完成!
盘中的汤/油不需要倒,鱼头吃到一半清水煮一些面加在里面也很香
喜欢吃辣一些的,可以把油替换成辣椒油
也可以在热油的时候,加入一点点花椒(几粒)八角(半个)带出香味后捞出,这样油会带一些香气,但需要注意不要炸糊了,差不多点捞出即可
