准备调料,泡粉丝
温水泡
粉丝,龙口粉丝很好泡,温水十几分钟就泡软了蒜切末,分成两份,一份放入碗中葱切成葱花,备用起锅烧油,等油温上去之后倒入蒜末碗中,搅拌均匀,加入剩下的一半蒜,并加入
3勺生抽、2勺蚝油、0.5匙盐、0.5匙白糖,搅拌均匀,备用要把油浇到蒜末里,只要能跟蒜末拌出粘稠状就可以,不要太多的油
油温上去之后会冒烟的,起锅烧油(锅里不要有水,会崩)烧到油开始有一点点冒烟,或者木筷子插进去会出现一点点细小的气泡就说明油温足够了
注意顺序,油热泼完蒜末之后再加入生抽、蚝油、盐、白糖;不要在泼油之前就加进去了

上锅蒸
泡软的粉丝平铺到盘中,
金针菇撕成小撮,松散地铺在粉丝上准备好的调料淋在金针菇上
小米椒切碎,洒在金针菇上水开上锅扣盖蒸8分钟

泼热油,开吃
撒上
葱花,淋1勺蒸鱼豆豉后,泼一勺热油上去,即可开吃!如果出锅时盘子里油很多,可以偷偷倒掉一点,没什么太大的问题,不影响味道
