蒜蓉粉丝金针菇

香气四溢的小菜,蒜香浓郁、粉丝吸汁入味,金针菇鲜嫩爽滑,入口满是蒜香与鲜味的融合

操作步骤#

  1. 准备调料,泡粉丝

    温水泡 粉丝,龙口粉丝很好泡,温水十几分钟就泡软了

    切末,分成两份,一份放入碗中

    切成葱花,备用

    起锅烧油,等油温上去之后倒入蒜末碗中,搅拌均匀,加入剩下的一半蒜,并加入 3勺生抽2勺蚝油0.5匙盐0.5匙白糖,搅拌均匀,备用

    要把油浇到蒜末里,只要能跟蒜末拌出粘稠状就可以,不要太多的油

    油温上去之后会冒烟的,起锅烧油(锅里不要有水,会崩)烧到油开始有一点点冒烟,或者木筷子插进去会出现一点点细小的气泡就说明油温足够了

    注意顺序,油热泼完蒜末之后再加入生抽、蚝油、盐、白糖;不要在泼油之前就加进去了

  2. 上锅蒸

    泡软的粉丝平铺到盘中,金针菇 撕成小撮,松散地铺在粉丝上

    准备好的调料淋在金针菇上

    小米椒 切碎,洒在金针菇上

    水开上锅扣盖蒸8分钟

  3. 泼热油,开吃

    撒上 葱花 ,淋 1勺蒸鱼豆豉 后,泼一勺 热油 上去,即可开吃!

    如果出锅时盘子里油很多,可以偷偷倒掉一点,没什么太大的问题,不影响味道
