酸溜土豆丝

家常素菜,口感脆爽、酸香开胃,酸中带微甜,简单快炒就能出锅,是最下饭的土豆吃法之一

操作步骤#

  1. 备菜

    土豆 切丝,泡入清水中洗去表面的淀粉

    土豆尽量用刀切丝,宽一点也没关系,尽量不要用切丝器,切丝器切出来的土豆丝太细,一炒就容易变的软塌塌

    切好的土豆丝洗一洗泡一泡,洗到土豆泡在清水里捞起来水中依然干净就基本可以了,这么做是为了让炒出来的土豆更脆

    切成蒜末,小香葱 切成葱花,干辣椒 切碎一点会比较好看

  2. 简单一炒,开吃!

    热锅冷油,等油温升高,丢入 蒜末干辣椒 爆香

    热锅冷油是利用了莱顿弗罗斯特效应防治粘锅,如果不理解那就听话照做就行,手放到锅上方30-50厘米可以感觉到温度代表锅热,可以倒油

    油温过高后会冒烟,不要等到他冒烟,过高的油温会直接把加进去的东西炸糊,手放到锅上方30-50厘米可以感觉到温度,或者木筷子插进去会出现一点点细小的气泡即可

    葱姜蒜爆香很快,几秒钟就好,抽油烟机好的朋友靠近闻一闻,是可以闻到香味的,火不要太大,会糊

    加入 土豆丝,翻炒个两分钟左右,炒到土豆丝略微变软

    加入 生抽蚝油白醋

    继续翻炒,即将出锅的时候加入 葱花段,翻炒两下出锅开吃!

    如果不确定土豆是不是熟了,就偷偷吃两根试试,她熟的很快,感觉差不多就可以了,炒久了土豆会变的软塌塌

    一定要用白醋试试,白醋炒出来的味道跟其他醋不一样的
