蒜蓉茄子

清香入味的家常菜,茄子软糯香滑,蒜香浓郁、咸鲜开胃,简单蒸一蒸、拌一拌就能轻松上桌

操作步骤#

  1. 蒸茄子

    茄子 横着切掉根部,竖着一分为二,平铺在盘子上,水开上锅扣盖蒸 5 分钟

    根部:绿色根茎部分

  2. 调制蒜末

    切末,分成两份,一份放入碗中

    小米辣 切碎,为蒜末总量的 1 / 3 ,放入碗中

    起锅烧油,等油温上去之后倒入蒜末碗中,搅拌均匀

    要把油浇到蒜末里,只要能跟蒜末拌出粘稠状就可以,不要太多的油

    油温上去之后会冒烟的,起锅烧油(锅里不要有水,会崩)烧到油开始有一点点冒烟,或者木筷子插进去会出现一点点细小的气泡就说明油温足够了

    加入 0.5匙鸡精0.5匙盐0.5匙白糖1勺蚝油1勺生抽,搅拌均匀,蒜蓉酱就调好了

  3. 热油激发香味,开吃!

    蒸好的茄子用小刀竖着划几刀将调好的蒜蓉酱倒在茄子上,继续蒸 3 分钟

    出锅撒上 葱花,泼一勺热油上去,开吃

    如果出锅时盘子里油很多,可以偷偷倒掉一点,没什么太大的问题,不影响味道
