操作步骤#

蒸茄子
茄子横着切掉根部,竖着一分为二,平铺在盘子上,水开上锅扣盖蒸 5 分钟根部:绿色根茎部分

调制蒜末
蒜切末,分成两份,一份放入碗中小米辣切碎,为蒜末总量的 1 / 3 ,放入碗中起锅烧油,等油温上去之后倒入蒜末碗中,搅拌均匀
要把油浇到蒜末里,只要能跟蒜末拌出粘稠状就可以,不要太多的油
油温上去之后会冒烟的,起锅烧油(锅里不要有水,会崩)烧到油开始有一点点冒烟,或者木筷子插进去会出现一点点细小的气泡就说明油温足够了
加入
0.5匙鸡精、0.5匙盐、0.5匙白糖、1勺蚝油、1勺生抽,搅拌均匀,蒜蓉酱就调好了 -
热油激发香味,开吃!
蒸好的茄子用小刀竖着划几刀将调好的蒜蓉酱倒在茄子上,继续蒸 3 分钟
出锅撒上
葱花,泼一勺热油上去,开吃如果出锅时盘子里油很多,可以偷偷倒掉一点,没什么太大的问题,不影响味道
